About the Recipe

Enjoy this brassica full salad with a refreshing ginger dressing! Brassicas are a group of vegetables that are packed with phytonutrients that have anti-inflammatory, anti-cancer, and liver detoxing properties.

Ingredients

  • 2 tbsp fresh ginger, peeled, chipped

  • 2 green onions, whites and green parts, coarsely chopped

  • 1 carrot, peeled and cut into chunks

  • 3 tbsp freshly squeezed lemon juice

  • 2 tbsp soy sauce or tamari

  • 1 tbsp sesame oil

  • 1 tbsp water

  • 1/2 tsp kosher salt

  • 1/2 tsp black pepper

  • 3 tbsp canola neutral oil, or other

  • 2 bunches watercress or upland stress, thick stems removed (10-12 cups loosely packed)

  • 1 bunch radishes, trimmed and thinly sliced

Preparation

Dressing

  1. In food processor, combine ginger, green onions, and carrot and pulse several times to chop finely.

  2. Scrape down the bowl with a spatula, then add lemon juice, soy sauce, sesame oil, water, and 1/4 teaspoon salt and pepper.

  3. With the food processor running add the canola oil in a steady stream through the feed tube to form an emulsified dressing.


Salad

  1. Put watercress and radishes in a serving bowl.

  2. Drizzle with half the dressing

  3. Add the remaining salt and pepper to taste

  4. Serve immediately
