About the Recipe

This vibrant hummus recipe couldn't be easier--just toss a few ingredients in the food processor and whir away! Roasted beets make this healthy dip extra flavorful. Serve with veggie chips, pita chips or crudités.

Ingredients

  • ½ teaspoon salt

  • 1 teaspoon ground cumin

  • 1 (15 ounce) can no-salt-added chickpeas, rinsed

  • 8 ounces roasted beets, coarsely chopped and patted dry

  • ¼ cup tahini

  • ¼ cup extra-virgin olive oil

  • ¼ cup lemon juice

  • 1 clove garlic

Preparation

  1. Place in food processor or blender and pulse until roughly chopped.

  2. Blend until smooth or desired texture, scraping down the sides as you go.
