About the Recipe

Plums are great at absorbing flavors to get a nice smoky-sweet flavor. This recipe can be used as topper for tacos, chicken, pork, or can be eaten on its own.

Ingredients

  • 2 large tomatoes, diced

  • ½ small red onion, diced

  • 4 plums, pitted and diced

  • 1 poblano chile pepper, seeded and finely chopped

  • 8 sprigs fresh cilantro, chopped

  • 1 teaspoon minced garlic

  • 1 teaspoon lime juice

  • ½ teaspoon salt

  • ¼ teaspoon freshly ground black pepper

  • ¼ teaspoon chili powder

Preparation

  1. Mix tomatoes, onion, plums, poblano Chile pepper, cilantro, garlic, lime juice, salt, black pepper, and chili powder in a bowl; cover with plastic wrap. Refrigerate until flavors blend, at least 1 hour.
