About the Recipe

Try out this beautifully colored homemade beet hummus. Hummus is made with chickpeas which are a type of pulse that is full of fiber and protein. Give hummus a try with veggies, on a salad, or on sandwiches and wraps for a higher better condiment option.

Ingredients

  • Dill (fresh, for garnish)

  • 3 tbsp lemon juice

  • 2 tbsp olive oil

  • 1 1/2 tsp salt

  • 2 14 oz cans chickpeas (rinsed and drained)

  • 2 cloves garlic (finely diced)

  • 1/4 cup tahini

  • 1/2 cup beets (cooked, chopped)

Preparation

  1. Add all ingredients to a food processor.

  2. Pulse until smoothly pureed.

  3. Transfer to a bowl and top with spring of fresh dill and additional olive oil on top before serving.
